Not your Grandma's Fruit Basket...

Sometimes, people need a little push to eat their fruits. We shove them in the crisper and forget they are there until we need to make room for something else. Or we let the bananas get over ripe and mushy inviting an infestation of fruit flies. I like to make my fruit visible. I use the side door of my fridge for fruit that needs to stay cool - making it unavoidable! And for fruit that needs to be room temperature...

Winter Roasted Veggies and Kielbasa

I love a good roasted vegetable... and this couldn't be easier.

WINTER ROASTED VEGGIES & KIELBASA


1 - 10 oz. pkg of Baby Bella mushrooms (or another of your choice)
1 - 1lb. pkg frozen or fresh Brussels Sprouts
3 - medium sized carrots - sliced
1/2 chopped white onion
6 oz. Lite Turkey Kielbasa - sliced
1/2 tbsp. Wegman's Basting oil (or another garlic & herb flavored oil)

Toss ingredients in basting oil. Roast all ingredients except mushrooms at 425 degrees for 15 minutes. Stir ingredients and add in mushrooms. Bake an additional 15 minutes.

Serves 2 - 370 calories each

This is a good, hearty, warm dish that will fill you up on a cold winters night (such as is every night in New England!). Vegetarians: Leave out the meat and add in other favorite veggies such as eggplant or potatoes. Enjoy!

"Phantom Fat" - sharing an article...

It's hard to be a former fatty... it's hard to be fat... I'm not sure (having been both) which one is more difficult. I've been struggling to find a book about this "phantom fat" phenomenon. If anyone knows of one, please share!

White Chicken Chili and Kumquats... not together of course.

So the holidays kicked me kind of hard - I worked a lot - stocked a lot of produce, made a lot of juice and cut a lot of fruit. Now that things are winding down and back to normal I can blog again! Hooray! I know you've missed my updates...

It's been a tad bit chilly in New England - with the lows ranging in the single digits... what better way to warm yourself than a bowl of chili? (I know, I probably have like 5 different chili recipes on here somewhere but I don't think I've posted a non tomato based one!)


WHITE CHICKEN CHILI

11 oz. Chicken Breast
1 can drained Cannellini beans
1 small can diced green chiles
1 diced red pepper
1 small diced yellow onion
2/3 cup frozen sweet corn
2 tbsp. corn starch
4 c. light/low sodium chicken broth
4 c. water
2 tsp. chipotle chile powder
1 tbsp. cumin
1 tbsp. chili powder
1 tbsp. chopped garlic
salt & pepper to taste

Makes 11- 1 cup servings - 90 calories each.

In a soup pot spray your pan with cooking spray and season your chicken with salt, pepper and chipotle powder. Cook until almost done then remove from pan. Leave bits of chicken goodness in the bottom and add broth, bring to a boil - scrape bits off bottom of pan. Add all other ingredients and simmer for 15 minutes or so. Shred or dice cooled chicken and add back to soup pot. Simmer another 5 minutes and serve! Add crushed tortilla chips, or bits of corn muffin, sour cream, scallions, or shredded cheese!

Now, as you know by now, I've been learning a lot about produce - a few new seasonal citrus fruits should be mentioned...

Blood Orange!
This fruit may be a little off putting by it's name, but it's super tasty - a tart/sweet flavor and a fantastic color. Even better, we're making blood orange juice!


Kumquats!
Not just fun to say, fun to eat! You just pop these into your mouth, rind and all. They burst like cherry tomatoes and have a little sweetness - sort of remind me of those orange slice jelly candies.


Ugli Fruit!
Yeah, it's not pretty... but it's juicy and really flavorful. Give it a shot.
